Cisternino sits on a hilltop in the Valle d'Itria, Puglia, at roughly 390 metres above sea level. The medieval centro storico is a tight grid of whitewashed lanes, arched passageways, and stone staircases that have changed little since the Norman period. Unlike Alberobello — 15 km to the northwest — Cisternino sees fewer coach parties, giving visitors a quieter read of the Itria Valley's characteristic architecture. The belvedere at the edge of the old town looks out over a landscape of trulli farmhouses, olive groves, and vineyards.
The town is closely identified with its fornelli pronti tradition: butcher-shops that grill cuts of lamb, horse, and pork to order on open fires inside the shop. Via Nazionale and the alleys off Piazza Vittorio Emanuele II hold several of these spots, which draw diners from Locorotondo (8 km north), Fasano (12 km east), and Ostuni (25 km southeast). The surrounding countryside produces Primitivo and Verdeca grapes under the Valle d'Itria IGT designation. Most visitors arrive between June and September, when masserie and trulli conversions in the valley reach capacity.
Accommodation in Cisternino runs mostly to small family-run hotels, B&Bs, and restored masserie outside the town walls. The Ferrovie del Sud-Est narrow-gauge line stops at Cisternino station, connecting to Bari (roughly 1 hour 45 minutes) and Taranto. Alberobello's UNESCO-listed trulli zone is a 15-minute drive.
