Bayonne sits where the Nive and Adour rivers converge, 8 km inland from Biarritz and 30 km north of the Spanish border. Bayonne holds two long-standing production claims — jambon de Bayonne (PDO-cured ham aged in the salt-wind of the Adour valley) and a chocolate tradition tracing to the 17th century, when Sephardic Jewish merchants introduced cacao processing here, making Bayonne one of France's earliest chocolate cities.
